Chicken Asparagus Stir-fry

Okay, so my husband was making fun of me for posting my brown rice recipe. So now I feel the need to justify it to you. Brown rice is a food people are scared of. Its one of those things people are scared to try, or have tried it and don’t like it because it wasn’t prepared properly. White rice loses tons of its nutrients in the preparation process. Brown rice is a whole, natural grain, therefore containing high levels of b vitamins, iron, magnesium, fatty acids and fiber. Brown rice is also proven to help lower cholesterol. It was my hope that sharing with you an easy, delicious way to prepare brown rice you may be more likely to try it and enjoy it if you do try it. Helping you achieve delicious, healthy eating habits.

The other reason I wanted to share the brown rice recipe with you is because it pairs beautifully with this fabulous one pot dish, which is also very good for you!

When I was growing up, I hated asparagus. Well…at least I think I did, I’m not really sure since I never actually tried it. The smell of it had me absolutely positive I hated it, therefore leaving no reason to torture my taste buds by trying it. That’s logical, right?!

I ended up poking a hole in that logic in my late teens when I tried asparagus for the first time. I really liked it. Who knew?!

I know asparagus is super nutritional- low in calories and sodium, packed full of nutrients and a good source of dietary fiber.  I think it tastes like a crunchy green bean, with a little bit of a funny taste to it! My favorite way to eat it is grilled, but when its cooked properly I like no matter how its prepared. Except boiled, don’t do that, you’ll ruin it!

Tasty and healthy, that’s how I like it! This dish is good, and good for you! It’s packed full of vegetables, you’re whole family is sure to enjoy!

P.S. Moral of the story try everything once, if you don’t love it you don’t have to eat it again! One of the many perks of being a grown up ;-) ! Don’t be afraid of the asparagus {or any food you haven’t tried} you might just love it!

Chicken-Asparagus Stir Fry

Makes 4 Servings

Prep Time: 15 minutes

Cook time: 15 minutes

Ingredients

3 Tablespoons reduced-sodium soy sauce

3 Tablespoons fresh lemon juice

1 teaspoon cornstarch

1 lb. boneless, skinless chicken breasts cut into 1-inch cubes

1 Tablespoon canola oil

2 garlic cloves, minced

4 green onions, cut into ½ inch diagonal pieces

1 lb. asparagus, cut into 1-inch diagonal pieces

Sugar snap peas

Carrots, cut into slices

Red pepper, cut into strips

Green pepper, cut into strips

Directions

1)    In a large bowl, make a marinade: Stir together soy sauce, lemon juice and corn starch. Add chicken pieces and coat well with the marinade.

2)   Heat oil in a large, nonstick skillet or wok over medium heat. Add chicken and stir-fry for 8-10 minutes or until chicken is no longer pink. Remove from pan and keep warm.

3)   Add garlic, green onions and asparagus to pan (and other vegetables) until asparagus is bright green, add chicken and toss to heat through.

4)  Serve over brown rice.
