Apple Pancakes with Cider Syrup

I love days that begin with a chilly morning and warm up to be a beautiful day! These apple pancakes with cider syrup are delightful start to any day! The apple pancakes are unlike any pancake I’ve ever had before, and I love knowing my family is getting a serving of fruit hidden inside! My favorite part of this recipe is this outstanding cider syrup, it is phenomenal! I think my family will be requesting this syrup many more times in the future, especially during the fall and winter months!

When I make this again we will at least double the syrup recipe, it disappeared quickly! 😉 I also think the next time I make these I will experiment with making apple pancakes with applesauce instead of with grated apples, just for a smoother consistency in the pancake!

Apple Pancakes with Cider Syrup

Serves 6

Prep/Total Time: 30 minutes

Yield: 12 Pancakes, 1 1/4 cups syrup


2 cups complete pancake mix

1-1/2 cups water

3/4 cup grated apple

1/2 teaspoon ground cinnamon


1/2 cup sugar

1 tablespoon cornstarch

1/8 teaspoon ground cinnamon

1/8 teaspoon ground nutmeg

1 cup apple cider or juice

2 tablespoons butter, cubed

1 tablespoon lemon juice


In a small bowl, stir the pancake mix, water, apple and cinnamon just

until moistened.

Pour batter by 1/4 cupfuls onto a greased hot griddle; turn when

bubbles form on top. Cook until second side is golden brown.

Meanwhile, for syrup, in a small saucepan, combine the sugar,

cornstarch, cinnamon and nutmeg. Stir in cider until smooth. Cook

and stir over medium-high heat until thickened and bubbly, about 5
