Honey Butter Pork Tenderloin or Pork Loin Roast

6 Apr

We have been eating so much chicken in my house lately! For one thing, it’s delicious. For another thing, I’ve been getting it for such a great price at the grocery store lately I’ve had it in abundance in my freezer. Lastly, my two year old would eat it for breakfast lunch and dinner if I’d let her! ūüėČ

So to change things up a bit, I made this delicious pork loin roast. The recipe is actually for a pork tenderloin, and that would no doubt be wonderful, but I had a pork loin roast on hand and it worked perfectly. I doubled the recipe for this 2 pound pork loin roast. It’s quick, it’s easy, and it was a hit even with the two year old!

I paired it with my hasselback potatoes and a vegetable. It was lovely!

Honey Butter Pork Tenderloin

4 tbs butter

2 tbs honey

1 1/2 pounds pork tenderloin, trimmed

1/2 tsp Cajun seasoning

1/2 tsp black pepper

1/4 cup water

Preheat oven to 375 degrees. In an ovenproof pot, heat butter and honey over medium heat until melted.  Sprinkle  pork tenderloin with Cajun seasoning and black pepper.  Brown each side for 5 minutes.

Place pan in oven and roast for 7 Р10 minutes.  Transfer the pork to a plate covered with foil to rest. Add water to pan and stir over medium heat.  Simmer until sauce is reduced to about 1/2 cup.  Slice pork on the diagonal and drizzle sauce over top to serve.

We consume a lot of chicken in this house too! Your roasted pork looks delicious and again, love the look of those hassleback potatoes. Must put them on the menu here this week. Happy Easter!
