Caramel Dark Chocolate Snack Mix

This was so fun to make! I’ve never made caramel corn before {just eaten tons of it} and I love making new things. It was so simple and delicious! I decided to get crazy and add dark chocolate trail mix and deluxe mixed nuts to it to make it even more wonderful, and it was! Sweet, salty, chocolatey, crunchy and finger-licking good!!

If you don’t have a popcorn maker, my popcorn photo tutorial may help you achieve best results.

This recipe is very easily customized, so feel free to tweak it to your liking!

First, you need your popcorn, 12 cups. I used Tiny but Mighty popcorn.

And some trail mix, 11 ounces. I used Archer Farms {available at Target} Dark Chocolate Trail Mix.

And mixed nuts {or your favorite kind}, 1 cup.

Dark Chocolate Snack Mix

1/2 cup butter

1/4 cup light corn syrup

1 cup brown sugar

2 teaspoons vanilla extract

1/4 teaspoon baking soda

1 teaspoon salt

12 cups air-popped popcorn {or perfect stove top popcorn}

11 ounces dark chocolate trail mix  {or your choice}

1 cup deluxe mixed nuts  {or your choice}

Preheat oven to 300 degrees F. Line a baking sheet with foil and spray with non-stick spray.

In a large pot, melt butter over medium heat. Add in sugar and corn syrup, whisking until dissolved, then let simmer (without mixing) until mixture begins to bubble – about 4 minutes. Cook over medium heat for about 4 minutes more until caramel is amber in color, this time stirring every 30 seconds or so in order for the sugar to not burn.

Turn off heat and whisk in vanilla, salt and baking soda. Gently fold in popcorn, turning it over and over again until it’s coated. Fold in about half of the trail mix and half of the mixed nuts, then spread popcorn on the baking sheet. Bake for 10-15 minutes, flipping every five minutes to ensure that all the popcorn is coated. Remove from oven and top with additional trail mix and nuts. Let cool, then break into bite-sized pieces.
