Crispy Jalapeno Popper Chicken and Homemade Taco Seasoning

My husband and I just bought our first house!!! We just moved from the town where we grew up and met each other to the town where my husband works! No more driving two hours a day to and from work for him! Not to mention, I have family and friends in this town! Friends with babies which is such a blessing, as a stay at home mom you can never have too many play dates!

Since we moved in we have had friends and family over a lot, and a lot of dinner parties! {My FAVORITE!} I have been making so many tasty meals, and I’m a little upset with myself that I haven’t been taking pictures of all of them to share with you! Worry not though, the meals I have been making have been sooo tasty we have put them in our family’s favorite recipes book so I guarantee we will be making them again soon, so I will be able to share them with you!

As you know,  I planted my first garden this summer, and in that garden there was 3 jalapeno plants. The plants were heavy producers and I found myself using jalapenos on a daily basis and adding them to everything! One of my favorite things to make with them {other than salsa} is jalapeno poppers. We love jalapeno poppers and we love the flavors involved with them. I wanted a way to make those tasty appetizers into a full meal. Thus, I bring you Cripsy Jalapeno Popper Chicken!

We just had it last night when my friend Adam was over and oh my gosh. I was literally having a mouthgasm with every single bite! I have a feeling we will be making this on a weekly basis! I served the chicken with fried potatoes and delicious Iowa sweet corn! But, feel free to be healthier than my taste buds were feeling last night and serve it with a side salad or some fruit!

Crispy Jalapeno Popper Chicken

***Please note! I highly recommend cutting pockets into the chicken the night or morning before you make it. I also recommend mixing up the filling and keeping it in the fridge. Otherwise, this can be a little time consuming if you are trying to get this on the table quickly on a week night! Plus, by mixing the filling ahead of time, you are giving all of the flavors and spices a chance to blend and do happy things together!***

Ingredients

1 cup panko bread crumbs

4 teaspoons canola oil

2 eggs

4 ounces cream cheese

1/2 cup shredded cheddar cheese

4 jalapenos, diced

Real bacon bits

4 chicken breasts

Flour, for coating.

Homemade Taco Seasoning, recipe follows

For the taco seasoning:

1 teaspoon chili powder

1/2 teaspoon cumin

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon cayenne pepper

1/4 teaspoon oregano

1/4 teaspoon paprika

salt and pepper to taste

Directions

In a bowl, combine the cream cheese, cheddar cheese, real bacon bits, jalapenos and taco seasoning.

Using a small utility knife, cut a pocket into the side of each chicken breast, until it is almost butterflied. Season the chicken with salt and pepper.

Preheat the oven to 375. Spray cooking spray on a rimmed baking sheet and place it in the oven while it preheats.

In a small skillet over medium heat, add the canola oil. When it begins to warm, add the panko bread crumbs. Stir to combine and cook until golden brown.

Divide the cream cheese mixture evenly between each chicken breast’s pocket, using toothpicks to secure, if necessary.

Using 3  bread pans, or a shallow bowls or plates fill each with the following. 1 with the beaten eggs, one with flour, and one with the panko bread crumbs. Dip the chicken first into the flour, then the egg, and then the panko, making sure to coat the chicken completely. Place the chicken on the hot baking sheet in the oven and cook for 25-30 minutes, or until chicken is cooked through. Devour and enjoy!
