Strawberry Lemonade Cookies with Pink Lemonade Frosting

I hope you all had a wonderful Easter! We sure did! Good times with good people and great food! We celebrated with my husband’s Dad’s side of the family; his Dad, Brother, Uncle, Grandma and Grandpa! My daughter had a blast finding Easter eggs and we all loved watching her! For our Easter dinner we had prime rib, mashed potatoes, sweet corn, my Great Grandma Aubrey’s potato salad, sweet orange salad, shrimp salad with sweet italian vinaigrette, homemade french bread dinner rolls and fresh rhubarb cake with ice cream for dessert! Wowza, that was a mouth full! Tomorrow I will post my Great Grandma Aubrey’s potato salad recipe! Its another one of our families favorites that is a staple for every family gathering!

Let’s talk about Pink Strawberry Lemonade Cookies, shall we? I stumbled across this recipe over at tip junkie when I was reading her post “12 Delicious Red Velvet Cupcake Recipes” where she featured my mini red velvet cupcakes. What an honor!  When I first read though the recipe for these cookies I was thinking they seemed like a great sister-recipe, so to speak, to my lemon snowflake cookies! In a way my lemon snowflake cookies taste like lemonade cookies, so I could not wait to try this pink lemonade version.

These cookies are definitely different! I don’t mean different in a bad way, as they are all gone! But at first bite your taste buds are just shocked. It’s hard to tell if it’s sweet or sour or too sweet or too sour. The flavors have a lot going on! I think they taste like candy, like a Starburst meets an Airhead meets SweetTart! See, I told you there’s a lot of flavors going on! No matter how you look at it, they are very yummy. I think they would be especially popular with children! The recipe has them frosted with a pink lemonade frosting but for my family I thought that would be a little too much sweet and a little too much lemonade flavor so I decided to roll the dough balls in powdered sugar before I bake them like I do with my lemon snowflake cookies. I also used my itty-bitty super tiny cookie scoop I talked about in this post which made adorable quarter sized, bite sized cookies! Because anything mini is adorable!

These are perfect for a spring and summer treat! And, would also be super adorable for Valentines Day or even Easter! I think a batch of these and a batch of lemon snowflake cookies would look adorable together at any gathering!They are super easy to whip up, using a boxed strawberry cake mix.

Pink Strawberry Lemonade Cookies with Pink Lemonade Frosting {frosting recipe below}


For the cookies:

  • Strawberry cake mix
  • 1 stick butter, softened
  • 2 eggs
  • 1 tsp. vanilla
  • 1 Tbs. water
  • 1/2 cup pink lemonade mix {the dry powder}

Combine all the ingredients in a bowl and beat with a mixer till well blended.  Drop by teaspoons into powdered sugar and roll to coat, then place onto a baking stone or cookie sheet.  Bake at 350 degrees for 8-10 minutes. {My mini ones took 8 minutes}

Pink Lemonade Frosting


  • 1 1/2 cups powdered sugar
  • 3 Tbs. pink lemonade mix {dry powder}
  • 3 Tbs. soft butter
  • 1-3 Tbs. milk

Stir the powdered sugar and lemonade mix together in a small bowl.  Stir in the butter.  Add the milk gradually, until the frosting reaches a spreadable consistency.  You want it thick, but smooth enough to spread.  Frost cooled cookies if desired.
